Garlic Chilli Chicken Noodles Ingredients

  • 1 tablespoon olive oil/tablespoon vegetable oil
  • 400g chicken mini fillets, sliced into smaller pieces
  • 2 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 1 tablespoon chilli paste
  • 1 teaspoon Chinese 5 spice
  • 2 tablespoons sweet chilli sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons ponzu or light soy sauce
  • Salt and pepper to taste
  • 3 spring onions (green onion), sliced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 pack straight to wok egg fried noodles
  • White sesame seeds, to serve (optional)

Variations and substitutions

Here are some variations and substitutions you can make to this Garlic Chilli Chicken noodles recipe:

  1. Swap out the chicken mini fillets for chicken breasts or chicken thighs.
  2. Use yellow peppers in addition to your green and red peppers for a pop of colour. (and extra vegetables too!)
  3. Use dark soy sauce instead of regular soy sauce. If wanting to make a gluten free version then use tamari. 
  4. Add in some sliced mushrooms, bok choy, pak choi or baby corn for extra crunchy veggies.
  5. Feel free to substitute the rice wine vinegar for black rice vinegar.

  13. For a vegetarian version, swap the chicken for firm tofu and use vegetarian oyster sauce instead of ponzu.

How to make garlic chilli chicken noodles

  1. In a small bowl, mix together the garlic paste, ginger paste, chilli paste, 5 spice, sweet chilli sauce, rice vinegar, ponzu, salt, and pepper. 
  2. Heat a large wok, large skillet or large non-stick frying pan over medium-high heat. Add the chicken and the sauce and stir-fry for 5-7 minutes, or until cooked through.
  3. Add the sliced spring onions and green and red pepper to the pan and stir fry for an additional 2-3 minutes.
  4. Add the straight to wok egg fried noodles and toss to combine with the chicken and vegetables. Stir fry for an additional 2-3 minutes or until heated through.
  5. Serve in bowls and sprinkle with white sesame seeds and some spring onion. Enjoy!
