One Tray Spicy Nduja Gnocchi

Ingredients

500 g Gnocchi

250g Cherry tomatoes

1 tbsp Olive oil

1 tbsp dried mixed Italian herbs

35g Nduja, crumbled

80g Cream cheese with herbs 

2 handfuls Spinach

Parmesan to serve

Substitutions and Variations

  1. Vegetarian/Vegan: To make this recipe vegetarian or vegan, simply omit the nduja and use a vegan nduja alternative. Swap the cream cheese for a vegan and dairy free cream cheese.
  2. Gluten-free: Swap out the gnocchi for a gluten-free gnocchi if available.
  3. Meaty: If you prefer a meatier dish, you could substitute the nduja for cooked sausage or pancetta.
  4. Spicier: If you like your food with a bit more spice than that of the nduja, try adding some crushed chilli flakes to the dish.
  5. Different Vegetables: Feel free to swap out the cherry tomatoes and spinach for other vegetables such as peppers or mushrooms.

How to make One tray spicy Nduja Gnocchi

  1. Preheat the oven to 200°C.
  2. Spread the gnocchi and cherry tomatoes in a single layer on the prepared baking tray.
  3. Add the crumbled Nduja to the gnocchi and cherry tomatoes and then drizzle with olive oil. Sprinkle the dried mixed herbs over the gnocchi and mix until combined. 
  4. Roast the tray in the preheated oven for 20-25 minutes, until the gnocchi is golden brown and crispy, and the cherry tomatoes are soft and caramelised.
  5. Once the gnocchi and cherry tomatoes are roasted, briefly remove the tray from the oven and add the cream cheese and spinach leaves.
  6. Stir to combine. Return to the oven for 5 minutes. 
  7. After the 5 minutes has passed, the spinach will have wilted and the cream cheese loosened remove the tray from the oven and stir everything to combine.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve in bowls topped with some grated parmesan if desired. Enjoy!

Storage, Reheating and Leftovers

  1. Storage: Store any leftover gnocchi in an airtight container in the fridge for up to 3 days.
  2. Reheating: Reheat the gnocchi in a microwave safe dish for 1-2 minutes. Alternatively, you could reheat the gnocchi in a frying pan over medium heat until warmed through. You may need to add a little water to loosen the mixture.
