  4. Place the baking sheet in the preheated oven and roast the salsa ingredients for about 15-20 minutes, or until they begin to caramelise and release their juices.
  5. Once the tomatoes, onion, chilli, and garlic are roasted, allow them to cool for a few minutes.
  6. Transfer the roasted ingredients to the bowl of a food processor. Squeeze out the roasted garlic from the bulb. Add the fresh coriander.
  7. Squeeze the juice of one lime over the mixture in the food processor, then gently pulse all the ingredients together until you achieve your desired consistency.
