3 medium sized sweet potatoes, chopped

1 red pepper

1 yellow pepper

2 tsp smoked paprika

2 tsp chipotle chilli flakes

2 tsp cumin seeds

Salt and pepper

Olive oil

For salsa,

Handful of Cherry tomatoes, chopped 

3 spring onions, chopped

1 red chilli, chopped

The juice of 1 lime

Chopped coriander 

To serve,

Mini flour tortillas 

Smashed avocado

Feta cheese

Coriander 

The hot sauce of your choice

How to make Chipotle Roasted Sweet Potato Tacos

  1. Preheat your oven to 200°C (400ºF).
  2. In a large mixing bowl, combine chopped sweet potatoes, sliced red and yellow peppers, smoked paprika, chipotle chilli flakes, garlic powder, cumin seeds, salt, black pepper, and a drizzle of olive oil. Toss until coated.
  3. Spread the mixture onto a large baking sheet. Roast for 25-30 minutes until tender and slightly crispy.
  4. While roasting, prepare salsa. Combine chopped cherry tomatoes, spring onions, red chilli, lime juice, and coriander in a bowl. Mix well.
  5. Once roasted, remove sweet potatoes and peppers from the oven.
  6. Warm tortillas according to package instructions.
  7. To assemble, spread smashed avocado onto each tortilla.
  8. Top with roasted sweet potatoes and peppers.
  9. Sprinkle crumbled feta cheese over the mixture.
  10. Spoon prepared salsa on top of the feta.
  11. Garnish with additional coriander leaves and a drizzle of hot sauce.
