Ingredients needed

6 Sweet potatoes

1 onion

4 cloves garlic

Olive oil

Salt

1tbsp Ginger paste

1tsp ground cumin

1tsp garam masala

1tsp kashmari chilli powder

1tbsp curry powder

1tsp ground coriander

1tbsp tomato paste

500ml vegetable stock

1 can of coconut milk

Chopped coriander to serve

How to make curried sweet potato soup

  1. Peel and chop the sweet potatoes, onion, and garlic.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
  3. Add ginger paste, ground cumin, garam masala, Kashmiri chili powder, curry powder, ground coriander, and salt. Stir to combine the spices with the onions and garlic.
  4. Add the sweet potatoes and tomato paste, stirring to coat the sweet potatoes with the spice mixture.
  5. Pour in the vegetable stock and coconut milk. Bring the mixture to a boil, then reduce heat and let it simmer until the sweet potatoes are tender.
  6. Once the sweet potatoes are fully cooked, use a stick blender to blend the soup until smooth and creamy.
  7. Adjust seasoning and add more salt and black pepper if necessary. Serve hot, garnished with chopped coriander.
