Sweet Potato and Chorizo Hash is a delicious and hearty dish that is perfect for breakfast, brunch, or even dinner. Ingredients:

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 red pepper, diced
  • 1tsp smoked paprika
  • 1tsp chilli flakes
  • 2 medium sweet potatoes, peeled and diced
  • 100g chorizo sausage, diced
  • 2 cloves of garlic, minced
  • 4 eggs, for poaching
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh chives, for garnish

Instructions:

  1. Heat the olive oil in a large frying pan over medium heat. Add the diced onion and red pepper, and sauté for 3-5 minutes, or until they’re soft.
  2. Add the smoked paprika and chilli flakes to the frying pan, and stir to combine.
  3. Add the diced sweet potatoes to the pan and cook for 10-15 minutes, or until the sweet potatoes are tender and lightly browned.
  4. Add the diced chorizo and minced garlic, and cook for an additional 2-3 minutes, or until the chorizo is crispy and browned.
  5. Using a spoon, create four small wells in the hash. Crack an egg into each well.
  6. Cover the pan and cook for 3-4 minutes, or until the egg whites are set but the yolks are still runny.
  7. Season the hash with salt and pepper to taste.
  8. Sprinkle chopped fresh chives over the top, and serve hot.

Substitutions and other ways to serve

  1. Vegetarian version: If you’re a vegetarian or vegan, you can substitute the chorizo with meat-free chorizo or plant-based sausage. Or omit the sausage and add some black beans or chickpeas for extra protein.
  2. Different vegetables: You can switch up the vegetables in this recipe and use whatever you have on hand. You could use courgette, mushrooms, or butternut squash instead of the red pepper.
  3. Spice level: If you prefer a milder dish, you can reduce the amount of chilli flakes or omit them altogether. Alternatively, if you prefer it spicier, you can add more chilli flakes or use a hotter variety of hot paprika.
  4. Breakfast bowl: Instead of poaching the eggs in the pan with the hash, you can serve the hash in a bowl and top it with a fried or poached egg, avocado, and some fresh herbs or a fresh salsa.
  5. Baking tray oven version: To make this recipe even easier, you can cook the hash on a baking tray in the oven. Toss the diced sweet potatoes, onion, red pepper, chorizo, garlic, and seasonings in a bowl with some olive oil, then spread everything out in a single layer on a baking tray. Roast in a preheated oven at 200°C for 20-25 minutes, or until the sweet potatoes are tender and everything is lightly browned. Add your poached eggs on top before serving.
  6. Different herbs: Instead of chives, you can use fresh parsley, coriander or thyme to add some extra flavour.
