Peach Overnight Oats

Today I’m sharing a delicious and easy to make recipe for Peach Overnight Oats. This dish is perfect for those mornings when you’re short on time, or for those “low spoon days” when you need something that is both comforting and nutritious. Overnight oats are a great way to prepare a healthy breakfast in advance, and this recipe takes it to the next level with the addition of fresh peaches and raspberries. It’s a perfect way to start your day, and you’ll love the combination of sweet peaches and tangy raspberries topped with a drizzle of honey.

Ingredients:

  • 225g rolled oats
  • 250ml almond milk
  • 125g Greek yoghurt
  • 1 peach, peeled and diced
  • 1 tsp vanilla extract
  • Pinch of salt
  • 60g fresh raspberries
  • 2 tsp honey

Instructions:

  1. In a medium bowl, combine the rolled oats, almond milk, Greek yoghurt, peach, vanilla extract, and salt.
  2. Stir well to combine and make sure the oats are fully covered in the liquid.
  3. Cover the bowl with cling film or transfer the mixture to an airtight container and refrigerate overnight.
  4. In the morning, remove the oats from the fridge and give them a good stir.
  5. Divide the oats between two bowls and top each bowl with fresh raspberries and honey.
  6. Serve immediately and enjoy your Peach flavoured overnight oats!

Substitutions and variations

Here are some substitutions and variations you can try with this recipe:

  1. Milk: If you’re allergic to almond milk or don’t like the taste, you can substitute it with any other milk of your choice, such as soy milk, oat milk, or dairy milk.
  2. Yoghurt: Greek yoghurt can be substituted with any other type of yoghurt, such as plain or flavoured yoghurt. You can also use dairy free yoghurt if you’re vegan.
  3. Fruit: You can substitute the peach with any other fruit of your choice, such as mango, banana, or blueberries. If fresh fruit is not available, you can use frozen fruit as well.
  4. Sweetener: Instead of honey, you can use maple syrup, agave nectar or any other sweetener of your choice.
